TASTING NOTES
Colour Ruby.
Aroma Good aromatic intensity, notes of black fruit such as raspberry and blueberry, rock rose, some herbaceous characteristic from the variety and well-integrated wood notes.
Mouth It is surprisingly fresh with a very good structure in the mouth, present but polished tannins with long and persistent aftertaste and with a great storage potential.
Food Pairing
Red meat dishes such as roasted lamb and roast beef. Game meat (pigeon and venison) and dishes with mushrooms, such as porcini or shiitake.
Vineyards
This wine is obtained exclusively from Tinta Roriz grape variety that comes from a portion of vineyard with about 42 years, installed at 200 meters of altitude.
Vinification
The grapes were manually harvested into chests of 25kg, after careful selection by their best state and followed to the traditional granitic stone tanks with foot treading and gentle pumping over the blanket leaching and extraction of the phenolic and aromatic compounds. At the end of the alcoholic fermentation the wine was transferred to 7000L barrels where malolactic fermentation occurred and aged for 18 months.
Barrel Aging
18 months in new 7000L French Oak barrel.
