Tasting notes
Straw yellow with salmon tones. Aroma of wild fruits with a slight touch of baking (or sourdough). Good acidity and freshness with an intense and creamy fine bubble mousse, persistent finish on the palate.
Food Pairing
Aperitifs, oven roasts, traditional dishes such as “leitão à Bairrada” and “Chanfana”.
Vinification
Total desteaming, gentle pressing, natural static decantation, controlled fermentation at 16ºC, sparkling using the classic method with degorgement à la voille.
Vineyards
The vineyards are located at the heart of Bairrada, in Anadia, between the Caramulo and Buçaco mountains at an elevation of about 50 meters above the sea level. The older vineyards were planted in 1972, followed by new plantations in 1999.
