Tasting notes
Straw yellow colour. Aroma intense and complex with citric and dried fruits notes. Lively and fresh, with excelente volume balanced by the acidity, with a long and persistent finish.
Food Pairing
Oven-roasted fish, codfish, black pasta with shrimp, soft cheeses.
Vinification
Manual selection, on a mat, of the grapes received in 15 kg boxes. After destemming and crushing, the masses were sent to a pneumatic press where the must was separated from the skin, and after this, it was subject to static decantation at low temperatures for 48 hours, for clarification. It fermented in stainless steel vats at controlled temperature, having part of the lot aged for about 6 months in used French oak barrels, and the other in stainless steel vats.
Vineyards
Vineyards located at the Sub-Region of Terras de Senhorim between the Dão and Mondego rivers, planted between 400 and 500m of altitude in granite soils, with approximately 36 years.
