Tasting notes
Deep ruby colour. Complex aroma with red and black fruits, combined with the floral tone of Touriga Nacional. Perfect balance between acidity and tanins, as well as barrel notes from aging, having an elegant and persistent finish.
Food Pairing
Game, Cozido à Portuguesa, duck rice, cured meats.
Vinification
Manual Harvest in boxes of 15kg. Selection of the bunches in sorting table, followed by destemming and crushing of the grapes. Fermentation in stainless-steal vats with controlled temperature of about 28º C. Separate vinification of the different varieties with maceration throughout the whole process, adapted to the characteristics of each variety.
Vineyards
Vineyards located at the Sub-Region of Terras de Senhorim between the Dão and Mondego rivers, planted between 400 and 500m of altitude in granite soils, with approximately 36 years.
