Tasting Notes
Greenish-colored white wine. Brilliant appearance. Notes of lime and fresh lemon wrapped in well-integrated oak nuances. On the palate, it is somewhat austere, with prominent acidity, considerable volume, and a long, highly persistent finish.
Food Pairing
Pairs well with roasted fatty fish, smoked fish, smoked meats, confit cod, octopus “à lagareiro,” and sushi.
Vinification
Direct pressing of the grapes in a pneumatic press in the absence of oxygen. Fermentation in stainless steel tanks with selected yeasts at a temperature of 15-17°C. Fermentation completed in a 5000-liter wooden vat.
Barrel Aging
1 year in a 5000-liter wooden vat. After 1 year, 50% of the wine was removed and replaced with 50% new wine. After another year, 50% of the wine was again removed and replaced with 50% new wine. Thus, the first wine has been aged for 4 years, the second for 3 years, and the third for 2 years.
