TASTING NOTES
Colour Ruby.
Aroma It is very fruity with prominent notes of ripe black fruit, like blackberries and plumps as well as notes of chocolate from the barrel.
Mouth Very complex with an acidity that gives it freshness, noticeable tannins but well-rounded and a long and persistent finish.
Food Pairing
Roasted octopus. Roasted lamb and goat.
Vineyards
This wine is obtained from grapes that come from vineyards planted in Quinta da Pacheca and from the vineyards of Vila Nova de Foz-Côa with around 40 years old.
Vinification
The grapes were manually harvested, destemmed and crushed. The fermentation occurred during 7 days in the traditional granitic stone tanks with foot treading and smooth reassembles. At the end of the alcoholic fermentation the wine was transferred into stainless steel vats where the malolactic fermentation occurred and then into 2nd and 3rd year Frech back barrels where it aged for 18 months.
Barrel Aging
18 months in 2nd and 3rd year French oak barrels.
