Vineyards
The grapes that give rise to this wine come from north-facing vineyards planted on schist soils, between 400 and 500 meters above sea level.
Grape Varieties
Malvasia Fina, Gouveio, and Viosinho.
Vinification/Aging
Pressing is done gently with whole clusters. The first fermentation takes place in stainless steel vats at a controlled temperature. The second fermentation occurs inside the bottle with the addition of free yeasts, where they remain for a period of 60 months until disgorgement.
Tasting Notes
Bright straw color, fine and persistent bubble. Aromas of toasted notes, citrus jam, and resins. In the mouth, it is fresh, vibrant, leaving lingering jammy notes.
Pairings
Oven-baked fish dishes, lobster and lobster, Valencian Paella.
