Tasting notes
Gold colour. Very delicate and complex aroma of ripe white-fleshed fruit and elegant toasted notes. Dry, tense, precise acidity and at the same time unctuous, deep and enveloping. Ends full of structure, vibrant and sophisticated.
Food Pairing
Oven-roasted fish, roasted goat and soft cheeses.
Vinification
Manual harvest into chests of 15kg. After destemming, the masses were pressed where the must was separated from the skins. After this operation, the must was subject to static decantation at low temperature, for clarification. Fermentation was conducted at the controlled temperatures of about 16 degrees.
Vineyards
The vineyards are located at the heart of Bairrada, in Anadia, between the Caramulo and Buçaco mountains at an elevation of about 50 meters above the sea level. The older vineyards were planted in 1972, followed by new plantations in 1999.
