Tasting notes
Colour Garnet
Aroma Great aromatic complexity, with notes of ripe black fruit, suggesting blackberries and plums, surrounded by hints of spices and some balsamic.
Mouth Very elegant and fresh, due to the delicate tannins so characteristic of the grape variety. It’s a very harmonious wine with great gastronomic aptitude.
Food Pairing
Oven-roasted cod, red meat.
Vinification
Manual harvesting in 15 kg boxes. Selection of the bunches on a sorting mat followed by destemming and crushing. Fermentation in temperature-controlled stainless steel vats. Fermentation in temperature-controlled stainless steel vats. Aged for 28 months in new and used French oak barrels.
Vineyards
Vineyards located at the Sub-Region of Terras de Senhorim between the Dão and Mondego rivers, planted between 400 and 500m of altitude in granite soils, with approximately 30 years.
