TASTING NOTES
Bright white wine with a greenish hue. Complex aroma with stone fruit (plum, apricot, peach), some tropical notes, subtle hints of oak, and great elegance. On the palate, it shows substantial structure, balanced acidity, complexity, and persistence. A gastronomic white wine.
Food Pairing
A highly gastronomic wine that can be enjoyed as an aperitif or paired with dishes such as Bulhão Pato-style clams, Galician-style octopus, octopus ‘à lagareiro’, or octopus fillets. Also pairs well with rich fish like oven-baked red porgy or blackspot seabream, roasted cod or cod rice. Meat dishes such as duck rice, roasted or confit duck. Composed salads with chicken or tuna also make excellent pairings.
Vinification
Vinification in open spout. After direct pressing of the grapes in a reductive environment, the must is clarified and transferred to the fermentation tank, where it is inoculated with selected yeasts and ferments at a temperature of 14–16°C until all sugars are fully depleted.
Barrel Aging
Aged for one year in 5,000-liter oak vats.
