TASTING NOTES
Colour Intense ruby-colored red wine.
Aroma The aroma is fruity (cherry, blackberry) with spicy notes from the wood. Very elegant.
Mouth In the mouth, it is intense, with great volume. Tannins present but well integrated. Good length in the mouth.
Food Pairing
Goes well with red meat dishes. Roast lamb or kid, Portuguese stew. Soft cheeses.
Vineyards
This wine comes from vineyards planted in Quinta da Pacheca, Lamego, with 50 to 60 years old and from Vila Nova de Foz Côa with 25 years old.
Vinification
Destemming and crushing, fermentation in a granite press with periodic pumping over and delestage. Temperature-controlled fermentation at 25ºC, with inoculation of selected yeasts. Simultaneous alcoholic fermentation with co-inoculation of lactic acid bacteria.
Aging 1 year in used 300-liter French oak barrels.
