Colour Bright straw color, fine and persistent bubbles.

Baked fish dishes, lobster and lobster, Paella Valenciana.
Vineyards
The grapes that give rise to this wine come from north-facing vineyards planted on schist soils between 400 and 500 meters above sea level.
Vinification
The grapes are hand-picked into 20 kg boxes with low sugar content and good acidity. The whole bunches are gently pressed. The first fermentation takes place in stainless steel vats at a controlled temperature, the second fermentation takes place in the bottle with the addition of free yeasts which remain there for a period of 60 months until the dégorgement
Barrel Aging
12 months in 2nd and 3rd year French oak barrels.
